There is an option to follow CRM merges and deletes in your CRM sync settings.
If you are looking for the ability to merge contacts or accounts within Salesloft that is a great piece of product feedback. You can always submit feedback by clicking on the circle with your initials in the top right corner of Salesloft and then selecting the “Submit Feedback” option from the sidebar.

+1We would deeply appreciate a re-prioritization on this. We currently manually delete 2000-10000 persons per month from SL due to records merging and converting in SF but not reflecting in SL despite both the options mentioned above being selected and modifying sync time to catch leads/contacts before/after merging/converting. Thank you for working on this for customers!
